Description

Ingredients
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 stalk celery, chopped
- 1 carrot, chopped
- 1/2 pound boneless, skinless chicken thighs, cut into cubes
- 1/2 pound beef chuck, cut into cubes
- 1/2 pound pork shoulder, cut into cubes
- 1 (14.5 ounce) can diced tomatoes
- 1 (8 ounce) can tomato sauce
- 1/2 cup beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon Worcestershire sauce
- 1 bay leaf
- 1/2 cup frozen corn
- 1/2 cup frozen lima beans
- 1/4 cup fresh parsley, chopped
- Salt, to taste
Instructions
1. Set the Instant Pot to the sauté setting and heat the oil. When the oil is hot, add the onion, garlic, celery, and carrot and cook, stirring occasionally, until the vegetables are softened and the onion is translucent, about 5 minutes.
2. Add the chicken, beef, and pork and cook, stirring, until the meat is lightly browned, about 5 minutes. Add the diced tomatoes, tomato sauce, beef broth, thyme, oregano, smoked paprika, garlic powder, onion powder, pepper, cumin, coriander, red pepper flakes, Worcestershire sauce, and bay leaf. Stir to combine.
3. Secure the lid on the Instant Pot and set the steam release valve to the sealing position. Set the Instant Pot to the manual/pressure cook setting and adjust the time to 15 minutes. When the time is up, let the pressure release naturally for 10 minutes and then carefully move the steam release valve to the venting position to release the remaining pressure.
4. Open the Instant Pot and stir in the corn, lima beans, and parsley. Taste and season with salt, if desired. Serve hot.
Equipment
This recipe requires an Instant Pot or other electric pressure cooker. You will also need a cutting board, knife, and wooden spoon for prepping the ingredients.
Notes
This recipe can easily be doubled if you are feeding a crowd. You can also use any combination of meats and vegetables that you like. Just be sure to adjust the cooking time accordingly.
