Ingredients

  • 3 pounds boneless chuck roast
  • 3 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 cup baby carrots, cut into thirds
  • 2 large potatoes, peeled and cubed

Instructions

1. Begin by patting the chuck roast dry with paper towels. This will help the seasoning adhere to the roast. Season the roast generously with the garlic powder, onion powder, thyme, salt, and pepper.

2. Turn the Instant Pot to the “Sauté” setting. Once the pot is hot, add the olive oil, and then the chuck roast. Sear the roast on each side for about 2 minutes. Remove the roast from the pot and set aside.

3. Add the beef broth, tomato paste, and Worcestershire sauce to the pot. Stir to combine. Place the roast back in the pot and add the carrots and potatoes. Secure the lid, turn the pressure valve to “sealing”, and set the timer to 60 minutes.

4. Once the timer is done, carefully turn the pressure valve to “venting” to release the pressure. Open the lid, and the roast should be fork-tender and ready to serve.

Notes

The roast will continue to cook a bit once the pressure is released. Be sure to let the roast rest for a few minutes before slicing and serving.
