Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 pound boneless, skinless chicken breasts, diced
- 4 cups chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 bay leaf
- Salt and pepper, to taste
- 2 tablespoons heavy cream
- 1/4 cup freshly chopped parsley
Instructions
- Set Instant Pot to the SAUTE setting. Add the olive oil and onion and cook until the onion is soft and translucent, about 5 minutes.
- Add the garlic, carrots, and celery and cook for 3 minutes.
- Add the chicken and cook for 2 minutes.
- Add the chicken broth, oregano, thyme, basil, bay leaf, salt, and pepper and stir to combine.
- Cover the Instant Pot and set to MANUAL/PRESSURE COOK setting for 10 minutes.
- When the cooking time is done, turn off the Instant Pot and allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
- Open the Instant Pot and stir in the cream and parsley.
- Serve and enjoy!
