Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 pound boneless, skinless chicken breasts, diced
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tablespoons heavy cream
  • 1/4 cup freshly chopped parsley

Instructions

  1. Set Instant Pot to the SAUTE setting. Add the olive oil and onion and cook until the onion is soft and translucent, about 5 minutes.
  2. Add the garlic, carrots, and celery and cook for 3 minutes.
  3. Add the chicken and cook for 2 minutes.
  4. Add the chicken broth, oregano, thyme, basil, bay leaf, salt, and pepper and stir to combine.
  5. Cover the Instant Pot and set to MANUAL/PRESSURE COOK setting for 10 minutes.
  6. When the cooking time is done, turn off the Instant Pot and allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
  7. Open the Instant Pot and stir in the cream and parsley.
  8. Serve and enjoy!
