Prep Time

This recipe requires minimal prep time. All you need to do is gather the ingredients and prepare the beef for cooking. This should take about 10 minutes. You will also need to allow time for the beef to marinade in the sauce overnight.

Cook Time

This recipe takes about 8 hours to cook in a crock pot. The beef should be cooked on low heat for 7 hours, then on high heat for 1 hour. This will ensure that the beef is cooked thoroughly and that the sauce has a chance to reduce and thicken.

Ingredients

  • 2 lbs beef chuck roast, trimmed and cut into cubes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Instructions

1. In a medium bowl, mix together the beef broth, red wine, tomato paste, Worcestershire sauce and brown sugar. Place the cubed beef in the mixture and stir to coat. Cover the bowl and refrigerate overnight.

2. The next day, add the onion, garlic, thyme, rosemary and black pepper to the crock pot. Stir in the marinated beef and pour the remaining marinade over the top of the beef. Cover and cook on low heat for 7 hours.

3. After 7 hours, turn the heat up to high and cook for an additional hour. This will allow the sauce to reduce and thicken.

4. In a small bowl, mix together the cornstarch and cold water to form a slurry. Add the slurry to the crock pot and stir to combine. Cook for an additional 15 minutes.

5. Serve the braised beef over mashed potatoes or rice. Enjoy!
