Charro Beans Recipe Instant Pot
Description
Charro beans are a traditional Mexican dish made with pinto beans, bacon, and a variety of seasonings. This Instant Pot version of the recipe is quick and easy to make and can be served as a side dish or as a main course. The beans are cooked in a flavorful broth and are great served with rice, tacos, or enchiladas. The Instant Pot cooks the beans perfectly in a fraction of the time it would take to make them in a pot on the stove.
Prep Time
This recipe has a preparation time of 15 minutes. This includes collecting and measuring all the ingredients, cutting the bacon into small pieces, and prepping the Instant Pot.
Cook Time
The cook time for this recipe is 30 minutes. This includes the time it takes to cook the beans in the Instant Pot, which is approximately 25 minutes. The last 5 minutes of the cook time is for allowing the beans to sit in the Instant Pot for natural release.
Ingredients
1 pound pinto beans, rinsed and sorted
1/2 pound bacon, cut into small pieces
1 onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
2 tablespoons olive oil
4 cups chicken broth
1 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Turn the Instant Pot to the sauté setting and add the olive oil. When the oil is hot, add the bacon pieces and cook until the bacon is crisp, about 5 minutes. Add the onion and garlic and cook for an additional 2 minutes.
2. Add the pinto beans, cumin, chili powder, salt, and pepper to the Instant Pot and stir to combine. Pour in the chicken broth and stir gently to combine.
3. Put the lid on the Instant Pot and set the vent to the sealed position. Cook the beans on the manual setting for 25 minutes. When the cooking time is up, let the beans sit in the Instant Pot for 5 minutes before releasing the pressure.
4. Serve the beans in bowls with a dollop of sour cream, if desired. Enjoy!

Recipe Tips
To make this recipe a bit easier, you can use pre-cooked bacon or pre-diced onion. You can also substitute canned beans for the dry beans. If you do use canned beans, reduce the amount of chicken broth to 2 cups and reduce the cooking time to 10 minutes.
If you prefer your beans softer, you can cook them for an additional 5 minutes. If you prefer them firmer, you can cook them for a few minutes less.
This recipe can be adjusted to suit your taste. Add more or less of any of the ingredients to make the dish your own. You can also add other ingredients like bell peppers, jalapeños, or corn.
