Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
- 3 cups potatoes, diced
- 1 cup corn kernels, fresh or frozen
- 2 cups cooked chicken, diced
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Turn on the Instant Pot to the sauté setting. Add the olive oil, onion and garlic. Cook until the onions are softened, about 5 minutes.
- Add the flour and stir to combine. Cook for 1 minute.
- Add the chicken broth, potatoes, and corn. Stir to combine.
- Close the lid, seal the valve and set the pressure cooker to manual, high pressure for 10 minutes.
- When the cooking time is finished, let the pressure release naturally for 10 minutes and then release the remaining pressure. When the valve drops, carefully open the lid.
- Add the cooked chicken, heavy cream, salt and pepper. Stir to combine.
- Serve hot and enjoy!

This recipe can be easily doubled to serve a larger crowd. To make it in the slow cooker, follow the instructions up to step 4 and then transfer the mixture to a slow cooker and cook on low for 4-5 hours or on high for 2-3 hours.
