Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 3 cups potatoes, diced
  • 1 cup corn kernels, fresh or frozen
  • 2 cups cooked chicken, diced
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Turn on the Instant Pot to the sauté setting. Add the olive oil, onion and garlic. Cook until the onions are softened, about 5 minutes.
  2. Add the flour and stir to combine. Cook for 1 minute.
  3. Add the chicken broth, potatoes, and corn. Stir to combine.
  4. Close the lid, seal the valve and set the pressure cooker to manual, high pressure for 10 minutes.
  5. When the cooking time is finished, let the pressure release naturally for 10 minutes and then release the remaining pressure. When the valve drops, carefully open the lid.
  6. Add the cooked chicken, heavy cream, salt and pepper. Stir to combine.
  7. Serve hot and enjoy!

Notes

This recipe can be easily doubled to serve a larger crowd. To make it in the slow cooker, follow the instructions up to step 4 and then transfer the mixture to a slow cooker and cook on low for 4-5 hours or on high for 2-3 hours.
