Ingredients
- 200g Digestive Biscuits
- 100g Butter, melted
- 200ml Double Cream
- 100g Dark Chocolate
- 1 teaspoon Vanilla Extract
- 200g Cadbury Mini Eggs
- 50g Milk Chocolate
- 50ml Double Cream
Instructions
1. Start by preheating the oven to 180C/160C Fan/Gas Mark 4. Grease a 20cm/8in springform cake tin with butter and line the base with baking paper.
2. Crush the digestive biscuits into fine crumbs and mix with the melted butter in a bowl. Press the biscuit mixture firmly into the base of the cake tin and bake for 10 minutes. Allow the biscuit base to cool completely.
3. In a separate bowl, whisk together the double cream, dark chocolate and vanilla extract until thick and creamy. Pour the mixture into the cake tin and spread evenly. Place the tin in the fridge for 15 minutes to set.
4. Meanwhile, melt the milk chocolate and double cream together in a bowl set over a pan of simmering water. When the mixture is smooth and glossy, remove from the heat and allow to cool slightly.
5. Once the chocolate mousse has set, remove the tin from the fridge and pour the melted chocolate over the top. Scatter the Cadbury mini eggs over the top and place the tin back in the fridge to set for a further 15 minutes.
6. Once set, remove the tin from the fridge and carefully remove the sides of the tin. Cut the Cadbury Pots of Joy into slices and serve.
