Ingredients

  • 2-3 pounds of beef chuck roast
  • 1 cup of beef broth
  • 1 tablespoon of Worcestershire sauce
  • 2 teaspoons of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of paprika
  • 1/2 teaspoon of red pepper flakes
  • 1/2 teaspoon of freshly ground black pepper
  • 1/4 cup of olive oil
  • 2-3 cloves of garlic, minced
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 1/2 cup of giardiniera (optional)
  • Italian-style rolls

Instructions

1. Start by trimming any excess fat from the beef chuck roast and cut into thin slices. Place the beef slices in a large bowl and set aside.

2. In a separate bowl, combine the beef broth, Worcestershire sauce, garlic powder, onion powder, oregano, basil, thyme, paprika, red pepper flakes, and black pepper. Whisk together to combine and then pour over the beef in the bowl. Mix together to coat the beef with the marinade and set aside.

3. Heat the olive oil in the Instant Pot on the sauté setting. Once hot, add the minced garlic, diced onion, and diced bell pepper. Sauté until the vegetables are softened and fragrant, about 3-4 minutes. Then add the marinated beef and any remaining marinade to the pot. Stir to combine.

4. Put the lid on the Instant Pot, making sure the release valve is in the sealed position. Set the Instant Pot to pressure cook on high for 25 minutes. When the cooking time is finished, allow the Instant Pot to naturally release pressure for 10 minutes and then carefully move the release valve to the venting position to release any remaining pressure.

5. When the pressure has been released, carefully remove the lid and stir the beef. If you would like a thicker sauce, you can turn the pot to the sauté setting and simmer for a few minutes to reduce the sauce. Taste the beef and adjust the seasoning if needed.

6. To assemble the sandwiches, place a few slices of the beef on an Italian-style roll and top with a spoonful of giardiniera, if desired. Serve the sandwiches while they are still warm.
