Ingredients:

- 2 celery stalks, diced
- 1 pound boneless, skinless chicken thighs, cut into 1 inch cubes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 6 cups chicken broth
- 1/2 cup uncooked egg noodles
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions:
- Set the Instant Pot to the "Sauté" mode. When the pot is hot, add the olive oil. Add the onion, garlic, carrots and celery and cook for 3-4 minutes, stirring occasionally.
- Add the chicken and season with oregano, thyme, salt and pepper. Cook for 5 minutes, stirring occasionally.
- Add the chicken broth and stir to combine. Secure the lid and set the pressure valve to "Sealing". Select the "Manual/Pressure Cook" setting and set the cook time to 5 minutes.
- When the cook time is complete, allow the pressure to release naturally for 10 minutes, then quick release any remaining pressure.
- Stir in the egg noodles and set the Instant Pot to the "Sauté" mode. Cook for 3-4 minutes, stirring occasionally, until the noodles are cooked through.
- Stir in the fresh parsley and season with additional salt and pepper, if desired.
