Ingredients
- 4-5 lbs oxtail

- 2 tablespoons tomato paste
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 carrots, chopped
- 2 celery stalks, chopped
- 1 bay leaf
- 2 tablespoons fresh parsley, chopped
Instructions
1. Start by prepping the oxtail. Trim off any excess fat, and season with salt and pepper. Set aside.
2. Heat the vegetable oil in the Instant Pot on the ‘Sauté’ setting. Once hot, add the oxtail and cook for about 5 minutes, or until nicely browned.
3. Add the onion, garlic, thyme, and paprika, and cook for another 2 minutes. Add the tomato paste, beef broth, Worcestershire sauce, salt, and pepper, and stir to combine.
4. Place the carrots, celery, and bay leaf on top of the oxtail. Close the Instant Pot lid and make sure the steam release handle is in the ‘Sealing’ position.
5. Press the ‘Manual’ button and adjust the time to 45 minutes. When the timer is done, let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
6. Carefully open the lid and remove the oxtail and vegetables. Place the oxtail and vegetables on a serving platter and garnish with fresh parsley.
