Description

Caldereta is a classic Filipino beef stew simmered in tomato sauce, garlic, onions and spices, until the beef is tender and the sauce thickens. It is a hearty and flavorful dish that’s perfect for cold weather. This version of Caldereta uses an Instant Pot which makes it much easier to prepare. The Instant Pot pressure cooker helps to tenderize the beef and infuses the flavors of the sauce much quicker than the traditional stovetop method. This recipe yields a delicious, flavorful and comforting Caldereta that will have you asking for more.

Ingredients

  • 2 lbs beef chuck roast, cut into 1 inch cubes
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 ½ cups tomato sauce
  • 1 cup beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon cayenne pepper (optional)
  • 1 bay leaf
  • 2 potatoes, peeled and cubed
  • 2 carrots, peeled and cubed
  • ½ cup frozen green peas
  • ¼ cup chopped fresh parsley, for garnish

Instructions

  1. Set the Instant Pot to Sauté mode and heat oil. When oil is hot, add the beef cubes and cook until browned. Remove the beef and set aside.
  2. Add the onion and garlic to the Instant Pot and cook until softened, about 3 minutes. Add the tomato sauce, beef broth, soy sauce, tomato paste, Worcestershire sauce, vinegar, sugar, oregano, black pepper, paprika, cumin, and cayenne pepper (optional). Stir to combine.
  3. Return the beef to the Instant Pot and add the bay leaf. Close and seal the lid. Set the Instant Pot to Manual/Pressure Cook mode for 15 minutes.
  4. When the cooking time is done, allow the pressure to naturally release for 10 minutes. After 10 minutes, manually release the remaining pressure. Open the lid and add the potatoes, carrots, and green peas. Close and seal the lid. Set the Instant Pot to Manual/Pressure Cook mode for 5 minutes.
  5. When the cooking time is done, manually release the pressure. Open the lid and stir the caldereta. Taste and adjust the seasoning, if necessary.
  6. Garnish with fresh parsley, and serve.

Notes

This recipe can easily be adapted to use chicken or pork instead of beef. You can also adjust the amount of spices to your liking. If you like it spicier, you can add more cayenne pepper or other spicy ingredients. You can also add other vegetables like bell peppers, mushrooms or zucchini.

Recipe Tips
