Ingredients

  • 1 1/2 pounds boneless beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 small onion, chopped

  • 1 (14.5-ounce) can diced tomatoes
  • 1 tablespoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup beef broth

Instructions

1. Turn your Instant Pot to the Saute setting. Once it is hot, add the olive oil and the beef cubes. Cook the beef cubes for about 5 minutes, stirring occasionally, until the beef is lightly browned.

2. Add the onion, garlic and bell pepper to the Instant Pot and cook for about 3 minutes, stirring occasionally, until the vegetables are softened.

3. Add the diced tomatoes, chili powder, paprika, cumin, oregano, salt and black pepper to the Instant Pot and stir to combine.

4. Pour the beef broth into the Instant Pot and stir to combine.

5. Place the lid on the Instant Pot and turn the valve to the sealing position. Cook on high pressure for 20 minutes.

6. Once the cook time is up, allow the pressure to release naturally for 10 minutes. After 10 minutes, quick release any remaining pressure.

7. Carefully remove the lid and stir the carne guisada. Serve hot over cooked rice.
