Ingredients

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 pound boneless, skinless chicken thighs

2 cups chicken broth

1 cup white rice

1/4 cup chopped fresh parsley

Instructions

1. Turn the Instant Pot to the sauté setting. When the pot is hot, add the olive oil. Add the onion and garlic and sauté for 5 minutes, stirring occasionally. Add the cumin, paprika, salt and pepper, and stir. Add the chicken thighs and sauté for 3 minutes, stirring occasionally.

2. Add the chicken broth and white rice, and stir. Place the lid on the Instant Pot and turn the valve to the sealing position. Set the Instant Pot to high pressure for 8 minutes. When the cooking is complete, allow the pressure to release naturally for 10 minutes.

3. Carefully open the lid and stir in the parsley. Serve the chicken and rice with your favorite side dish.

You’ll need an Instant Pot for this recipe, as well as a cutting board, knife, and measuring cups and spoons.

Notes

If you don’t have an Instant Pot, you can make this dish in a large pot or Dutch oven. Just bring the ingredients to a boil, reduce the heat, cover, and simmer for 20 minutes.
