Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients:

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1/4 cup chopped fresh parsley (optional)

Instructions:

  1. Pat the chicken breasts dry with a paper towel and season both sides with the garlic powder, onion powder, Italian seasoning, salt, and pepper.
  2. Turn the Instant Pot to the “Saute” setting and add the olive oil. Once the oil is hot, add the chicken breasts to the pot and brown both sides, about 3 minutes per side.
  3. Remove the chicken from the pot and set aside. Add the chicken broth and scrape the bottom of the pot to remove any browned bits.
  4. Place the chicken breasts back in the pot and turn off the “Saute” setting. Secure the lid, making sure the valve is set to “Sealing”. Select the “Manual” or “Pressure Cook” setting and set the timer for 10 minutes.
  5. When the timer is done, quick-release the pressure. Carefully remove the chicken breasts from the pot and set aside.
  6. Turn the Instant Pot to the “Saute” setting and add the butter and lemon juice. Cook, stirring constantly, until the sauce thickens, about 2 minutes. Add the parsley and stir to combine.
  7. Return the chicken breasts to the pot and coat with the sauce. Serve immediately.
